Getting started on your holiday baking?  Try this recipe for a chewy chocolate treat:  Reindeer Droppings!  Well technically, I was told they are called “Moose Droppings” but I switched it up for the holidays!  Our lovely friend Jenn brought these into the office and they were a hit!  I’ve since made them at home, and they are very easy and quite tasty.  Of course, they are refined sugar-free, and can easily be made as a dairy and gluten free treat as well.

What you need:

  • 1/4 cup ground flaxseed
  • 3 cups organic oats (small flake, gluten-free if desired)
  • 1/2 cup cranberries
  • 1/2 cup shredded coconut (I used unsweetened)
  • 1/2 cup chopped walnuts
  • 1/2 cup cocoa
  • 1/2 cup raisins
  • 1/2 cup organic peanut butter
  • 2/3 cup honey
  • 1/2 cup almond or coconut milk (may add more depending on consistency)

Mix together dry ingredients.  In a separate bowl combine wet ingredients and stir until mixed well. Add the wet ingredients to the dry ingredients until mixed throughly.   You may want to add more milk, depending on your desired consistency.

Roll mixture into small balls or press into 10×10 shallow baking dish.  Refrigerate for 2 hours to allow to set and chill.  Cut into squares if needed.  Enjoy!!
