Warm up with this GLUTEN and DAIRY-FREE Seafood Chowder! Absolutely delicious and EASY. Trust me, you’ll want to try this one!
What you need:
- 3 Tbsp. ghee, olive oil, or coconut oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 3 large carrots, diced
- 2 potatoes, chopped
- 4 cups chicken or seafood stock (I used chicken)
- 1 can coconut milk
- 1 Tbsp. fresh parsley, roughly chopped
- 8 oz. salmon*
- 1 lb. white fish*
- 1 1/2 dozen shrimp*
- 2-3 Tbsp Coconut flour
- 1 cup frozen peas
- salt & pepper to taste
- I just used 3 packs of fresh seafood chowder mix from the store. But, check out Just Seafood in Rothesay, for great quality fish.
Directions:
- In a large pot, saute onion in oil over medium heat until translucent. Add garlic and cook for another minute, until fragrant.
- Add carrots and potatoes, sauté for approximately 5 minutes.
- Add stock and coconut milk and whisk well to combine. Season with salt and pepper. Bring to a simmer for about 15 minutes, or until potatoes and carrots are just about soft.
- Ladle about a half cup of broth in a small bowl; whisk in 2-3 Tbsp of coconut flour until smooth (this will help thicken the broth and avoid creating lumps). Add back to the pot.
- Add parsley, fish, and peas and simmer for 5-10 minutes or until seafood is cooked
- Serve and enjoy!
