This has blueberry baked oatmeal has become a household favourite for a quick reheat breakfast option on these cool winter days.

Ingredients:

  • 2 ¾ cups old fashioned oats 
  • 2 Tbsp ground flax 
  • 1 tsp baking powder
  • ½ – 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • 1/4 cup maple syrup
  • 1 ripe banana, mashed or 1/2 cup applesauce (I prefer it with the mashed banana) 
  • 2 eggs
  • 1 ½ cups milk of choice 
  • ¼ cup melted coconut oil
  • 2 tsp pure vanilla extract
  • ¼ cup almonds sliced or chopped (can omit for nut-free)
  • 1 ½ cups frozen blueberries

Steps:

  1. Preheat the oven to 375℉. Grease a 9×9 baking dish with coconut oil.
  2. In a bowl, combine all of the ingredients, except the blueberries, and mix.
  3. Layer 1/3 of the blueberries on the baking dish. Top with 1/2 of the oatmeal mixture. Top with next 1/3 of blueberries. Pour the remaining oatmeal mixture. Top with remaining blueberries and nuts if using.
  4. Bake for 30-35 minutes or until the center is set. 
  5. Let sit for 10 minutes before serving.
  6. Can be eaten alone or topped with yogurt and maple syrup if you’d like.
