Melissa, our amazing office receptionist, introduced me to this recipe.  For those interested in chili with a twist – this is one for the books!

What You’ll Need:

  • 1 tbsp butter, ghee, or oil that tolerates heat well
  • 1 lb ground turkey (Kredl’s has great quality!)
  • 1 large onion, chopped
  • 2 green bell peppers, diced
  • 1 tsp ground coriander
  • 2 tbsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 3 bay leaves
  • 1 jar tomatillo salsa (I get the black label from SuperStore)
  • 1-2 can of diced green chiles, drained
  • 1 small jalapeno pepper, seeded and finely diced (leave seeds if you prefer more heat)
  • 1 quart vegetable broth
  • 2 can Eden Foods White beans
  • 1 cup chopped cilantro
  • 1 lime wedge
  • cayenne (optional if you like heat!)

Instructions:

  1.  Heat 1/2 of the butter/ghee in large pot over medium high heat.  Add ground turkey and cook until browned.  Transfer cooked turkey to a bowl and return pot to heat.
  2. Add other 1/2 of butter/ghee and add bell pepper and onion and cook until softened and golden brown.
  3. Add turkey back to the pot with spices and salt and mix well.
  4. Add bay leaf, tomatillos, chiles, jalapeno, and broth.  Reduce heat and simmer covered for 40 minutes.  Add more broth (up to 2 cups) if you desire a less chunky chili.
  5. Gently stir in beans and cook for another 30 minutes.
  6. Stir in cilantro and the very end before serving.
  7. Top  with a lime wedge and ENJOY! 🙂
